Rabbits have for several years been a central part of our farm, and in 2018 we are adding a rabbit meat CSA program for the High Country. We raise a mix of heritage and commercial breeds, selecting for those that have excellent mothering skills, large consistent litters, and thrive on a mix of non-gmo pellets and plenty of pasture/garden supplements. Beyond meat, they provide all the fertilizer for our garden, so we plant extra of their favorites: carrot tops, kale, fennel, sunchokes, and even use them to “mow” areas of the yard and garden in movable rabbit tractors.
Our CSA (Community Supported Agriculture) will run from June through August and September through November, with two monthly pick-up dates. For small shares, that’s one rabbit per pick-up, or two rabbits for the large option, and you have the option of signing up for the Summer (June-August) or Fall (Sept-Nov) or both!
Small share : $75 (2 rabbits per month) – sign up by May 1st
Large share : $150 (4 rabbits per month) – sign up by August 1st
We will have two pick-up locations: on the farm in Trade or delivered to the High Country Food Hub at 252 Poplar Grove Rd, Boone NC, behind the Watauga County Ag Extension Office. Pick-up in Boone will be available on Wednesdays from 11:30am to 5:30pm at the HCFH on the following dates:
June 6th and 20th
July 11th and 25th
August 8th and 22nd
Why subscribe to a rabbit CSA? Your advanced subscription helps us purchase the feed, packaging and supplies to raise your rabbits, while supporting a delicious, sustainable meat and our growing farm. On average, our dressed rabbit weighs 2.5 lbs, so this works out to roughly $5/lb for non-gmo meat! That’s over 15% off our usual $6/lb retail price, which we are able to offer with your sustained support through the CSA model. It’s a great way to stock your pantry and try something new! Some of the benefits include a monthly newsletter with recipes and cooking tips to make the most of your rabbit, including organs and bones. We’ve been raising and eating rabbits for about four years now, so we’re happy to provide you with ideas for cooking and breaking down a whole rabbit and suggestions that utilize what’s in season in the High Country.

Not ready to commit to a monthly share? We generally have whole rabbit available April – November for $6/lb. Average dressed weight is 2.5lbs, or $15 for a whole fryer (organs by request). Unfortunately due to the closure in 2017 of the only FDA approved rabbit processor in the area, we are not able to supply rabbit to restaurants.
